Every gelato maker in Italy has a pistachio on offer, and it’s usually the gauge by which the rest of their gelati are judged, so the pressure was on! We deliberated long and hard, and then we went ALL OUT for this Italian classic, using only the best that Italy has to offer, the Sicilian ‘green diamond’ pistachio nut from Bronte, Catania. We managed to source a pure, unadulterated nut butter derived from pistachios that have benefitted greatly from the rich, volcanic soil near Mount Etna, and the result is phenomenal.
